Leah Kirchmann’s #SaveTheSummer smoothie bowl:
I love making smoothie bowls for breakfast and as recovery meals. I’ve been dreaming of my favourite things about summer since Sunweb recently launched their #SaveTheSummer campaign, encouraging everybody to act now in order to take care of the future. Smoothie bowls are definitely one of my favourite summertime things!
It can be tough to accept the current restrictions to life as we face a global health challenge. However, it is essential that we all stay at home, wash our hands, keep our distance from others, and follow the instructions from our local governments to improve outcomes for everyone.
Thinking of the things that we look forward to in the future can help with accepting these temporary restrictions. Together we can act responsibly to save the summer and get back to normal life as quickly as possible.
You can easily adjust this recipe based on what you have available in the house. Blueberries are my favourite fruit, and it just so happens that they are one of the healthiest foods in the world. They can reduce inflammation to support a healthy body, and are simply delicious. Quark or Greek yoghurt add protein to help support and recover from training. Maple syrup is an essential ingredient in every Canadian’s diet. A fun fact is that the bottle pictured was the prize from my victory at Canadian National Time Trial Championships last season.
⅔ cup (150g) Greek Yoghurt or Quark
½ cup (50g) Frozen Blueberries
1 Frozen Banana, cut into chunks
1 Tbsp (15g) Maple syrup
½ tsp (2.5g) Cinnamon
1 tsp (5g) Vanilla extract
